
Hello, my dear readers! Today I’ve got a really special recipe for you, my very favorite party salad and in my opinion the world’s best potato salad! :) We have been making this salad for many parties for about four years now and each time, the party guests liked it so much that they then spread the recipe among their own friends and acquaintances. It’s not difficult to make it and it’s super tasty! :)
Ingredients you need:
– Potatoes
– Fresh spring onions, a red onion and fresh garlic
– Dried tomatoes, olives and feta / sheep’s milk cheese
– Green pesto (freshly made like after this pesto recipe or just the normal one from your local market)
Cook the potatoes and let them cool down (I prefer boiled potatoes made a day in advance, they taste best). Then cut them into cubes and put them into a bowl. Next, cut dried tomatoes and add them. Also add olives, chopped onions and garlic and the sheep’s milk cheese. Last but not least, add the pesto.
Then mix everything and let the pesto’s oil soak into the potatoes.
Tastes with some bread or toast and aioli or combined with all your other favorite party salads.

Liebe Ursula, ja, der Salat braucht tatsächlich kein Essig! :) Das Pesto und das darin enthaltene Olivenöl sind alles, was er als Sauce / Dressing braucht. :)
