Hi readers. :) When I turned 24 in February, I made a list with goals for the new year of my life. One goal was to try out 24 new recipes. Although I have already tried out some new things, I will change this goal a bit and will only count the recipes I post here on my blog, because I want to share them with you and maybe there’s something which you would like to try out, too. :) Concerning cooking, I have to add that I have not eaten any animal (neither meat, nor fish) for more than 4 month now and I do not plan to change this soon. I don’t call myself a vegetarian, because I cannot say for sure whether I will eat meat again one day or not, but currently, I don’t have the desire to do so and I could not eat an animal with a clear conscience. Thus, you will currently only find vegetarian recipes on my blog. :) Although I have always been eating a lot of fruits and vegetables and have never been this kind of person who needed meat every day, I am more and more surprised how versatile and delicious vegetarian cuisine can be. :)
So here’s the first recipe which is very easy to make after a stressful day, vegetarian zucchini soup with coconut milk. :)
You need:
– 2 zucchinis
– 1 onion
– Some fresh garlic
– Sheep’s milk cheese
– About 300 ml / about 0,5 pint of vegetable broth
– About 400 ml / about 0,7 pint of coconut milk (approximately one little can from the supermarket)
Chopp the onion and the garlic into tiny pieces and steam both in a saucepan. In the meantime, chopp the zucchinis and add them. Steam everything until it is soft and then add vegetable broth and coconut milk. Let everything shortly boil up, add spices (I used salt, pepper, paprika and chili) and the sheep’s milk cheese and enjoy your meal. :)
